Kesu - paradajkova natierka / Cashew - tomato bread spread

CO POTREBUJETE (na ranajky pre dvoch):

50g nesolenych kesu orechov / 50g unsalted cashew nuts
1 vacsia paradajka / 1 big tomato
niekolko kvapiek z citrona / few drops of lemon juice
sol / salt
stipka mleteho cierneho korenia / pinch of ground black pepper
stipka tandoori masala / pinch of tandoori masala
niekolko listkov bazalky (pouzila som thajsku) / few basil leaves (I used thai basil)

AKO POSTUPOVAT:

Kesu orechy opecieme nasucho na panvici dohnedkava. Nechame vychladnut a rozmixujeme s paradajkou na pastu. / Dry roast cashew nuts. Let them cool down and blend them with tomato to make smooth paste.

Pastu (zaklad natierky) dame do misky. Pridame sol, mlete cierne korenie, tandoori masala a citronovu stavu. Premiesame. / Move spread into the bowl.  Add salt, black pepper, tandoori masala and lemon juice. Mix well.

Nakoniec pridame nasekane listky bazalky a natierku dobre premiesame. Ulozime na pol hodiny do chladnicky a potom podavame s chlebom alebo pecivom. / Finally add chopped basil leaves and again mix well. Place the spread in refrigerator for 30 minutes and serve with bread.

Baklazany v kesu omacke s vonou senovky greckej

CO POTREBUJETE:

6ks baby baklazanov
hrst kesu orechov + voda na ich namocenie
1/3 lyzicky tamarindovej pasty + voda na jej rozpustenie
1/2 lyzicky susenych listkov senovky greckej + voda na ich namocenie

olej
1/2 lyzicky rimskej rasce
niekolko kari listkov
1 velka cervena cibula
3 struciky cesnaku
1/3 lyzicky mletej kurkumy
1/3 lyzicky mleteho chilli korenia
sol
1 lyzica paradajkoveho pyre (lepsie rozmixovat jednu cerstvu paradajku)
voda podla potreby

AKO POSTUPOVAT: 

Kesu orechy na pol hodiny namocime vo vode. Tamarindovu pastu rozmiesame vo vode. Orechy potom s trochou vody rozmixujeme na pastu a odlozime bokom do dalsieho pouzitia.

Susene listky senovky namocime do vody. (Nedavajte ich viac, su velmi aromaticke a maju silnu chut, jedlo by vam mohlo zostat horke.)

V hrnci zohrejeme olej. Pridame rimsku rascu a kari listky. Nechame ich rozvonat.

Pridame nadrobno nakrajanu cibulu a cesnak. Restujeme na stredne silnom ohni domakka.

Dalej pridame na mensie kusky nakrajane baklazany, mletu kurkumu a chilli korenie; osolime, premiesame a 5 minut  dusime pod pokrievkou na miernom ohni.

Pridame paradajkove pyre a tamarindovu vodu. Premiesame a pod pokrievkou dusime dalsich 5 minut.

Nakoniec pridame kesu pastu, namocene listky senovky greckej a dostatok vody, aby nam vznikla husta omacka. Kari premiesame a 2-3 minuty na miernom ohni povarime, neprikryvame.

Podavame s plackami ako napr. Naan, Paratha.

Rasedar Baigan / Brinjals cooked with coconut milk.

CO POTREBUJETE:

250g (asi 5ks) baby baklazanov / 250g small brinjals (approx. 5pcs.)
olej / oil
sol / salt
stipka asafoetida rozmiesana v 1 lyzici vody / pinch of asafoetida disolved in 1tbsp of water
1/3 lyzicky mleteho chilli korenia / 1/3tsp of chilli powder

AKO POSTUPOVAT:

Vo woku zohrejeme olej. Pridame na male kusky nakrajane baklazany a sol. Restujeme 2 minuty na silnejsom ohni.  / Heat the oil in wok. Add brinjal cut in small pieces and salt. Fry for 2 minutes on high flame.

Potom pridame kurkumu, chilli korenie a premiesame.  / Then add termaric, chilli powder and stir well.

Ihned pridame asafoetida rozmiesane vo vode, ohen zmiernim a dusime pod pokrievkou 10 minut. / Add asafoetida disolved in water, reduce the heat and cook covered for 10 minutes.

Nakoniec pridame kokosove mlieko a povarime na miernejsom ohni odokryte este asi 3 minuty. / Finally add coconut milk and cook on medium heat for another 3 minutes.

Aloo Paneer tikki / Potato and paneer fritters

CO POTREBUJETE (na asi 12ks):

2 vacsie zemiaky uvarene v supke / 2 big potatoes, boiled
sol / salt
tandoori masala alebo garam masala podla chuti / tandoori masala or garam masala
nasekana cerstva koriandrova vnat / chopped fresh coriander leaves
mozete pridat aj nasekanu zelenu chilli papricku (ja som vynechala) / green chilli (optional)
arasidovy olej na vyprazanie / peanut oil

AKO POSTUPOVAT:

Zemiaky uvarime v sukpe a nechame poriadne vychladnut. Potom osupeme a nastruhame do misky. Pridame k nim nastruhany paneer, sol, korenie a koriandrovu vnat a dobre premiesame. Najlepsie rukou. Zmes nechame asi hodinku v chladnicke odlezat. Misku dobre uzavrieme, aby nam zmes neosychala.  / Cook unpeeled potatoes and let cool down. Peel them and grate. Add grated paneer, salt, spices and coriander leaves. Stir well. Place this mixture into the refrigerator and let rest for about 1 hour. Do not forget to cover the bowl with mixture before you place it into the fridge.

Panvicu rozhorucime. Potrieme olejom. Ked je dobre horuca zo zemiakovej zmesi robime gulky, ktore splostime a ukladame na horucu panvicu. Ohen trocha zmiernime a tikki pomaly vyprazame dohneda z oboch stran. / Heat the tava. Apply some oil. When tava is hot start making small balls from the mixture. Flatten each ball between our palms and place them on hot tava. Reduce the heat a bit and fry tikkis until they turn brown on both sides.

Podavame s oblubenym chutney, ako napln to placiek spolu s cerstvou zeleninou alebo do zemle ako vege burger. / Serve with chutney, you can use them as filling for chapati rolls or for veg burgers.

Placky Dosa s jarnou cibulkou

CO POTREBUJETE (na 8ks):

1 pohar kratkozrnnej ryze
1/4 pohara urid dal
niekolko semienok senovky greckej
1 pohar instantnych ovsenych vlociek
sol
voda
stipka prasku do peciva
zelena cast jarnych cibuliek

AKO POSTUPOVAT:

Ryzu a urid dal preplachneme. Zalejeme vodou, prihodime niekolko semienok senovky greckej a nechame namocene minimalne 6 hodin. Najlepsie cez noc.

Potom ryzu s urid dalom, semienkami senovky, ovsenymi vlockami a troskou vody rozmixujeme na polohuste cesto. Pridame zelenu cast jarnych cibuliek a znova premixujeme.

Cesto dame do misky, pridame stipku prasku do peciva, sol a premiesame. Misku zakryjeme cistou utierkou a cesto nechame odpocivat - fermentovat. 

Dalej pokracujeme v priprave placiek ako pri Dosa. Opekame na suchej panvici z jednej strany.

Makhana (lotosove semena) ako snack / Makhana snack

CO POTREBUJETE:

2 hrnceky lotosovych semien (makhana) / 2 cups of makhana (lotus seeds)
olej / oil
1 plocha lyzicka tmavej rimskej rasce (shah jeera) / 1 flat tsp of black cumin (shah jeera)
2 zelene chilli papricky / 2 green chillies
sol / salt

AKO POSTUPOVAT:

V hrnci zohrejeme olej. Pridame rimsku rascu, chilli papricky a asafoetida. Nechame rascu rozvonat. Potom pridame kari listocky a nechame prasknut. / Heat some oil in the pot. Add black cumin, chillies and asafoetida. Let the cumin pop up. Then add curry leaves and let them pop up too.

Dalej pridame mletu kurkumu a prehrejeme. / Add termaric.

Ihned pridame lotosove semena a sol, premiesame a na miernejsom ohni restujeme na obcasneho premiesania asi 2-3 minuty. / Add lotus seeds and salt, stir well and on low heat fry for about 2-3 minutes. Stir constantly.

Hrachovy Hummus / Green peas hummus

Hummus nemusi byt len s cicerom. V poslednej dobe ma bavia zelene suroviny, a tak som aj dnes urobila hummus nazeleno.

CO POTREBUJETE:

1 hrncek (200ml) cerstvo vyluskaneho hrachu / 1 cup of fresh peas
voda na blansirovanie hrachu + sol / water and salt
2 struciky cesnaku (pre viac palivy hummus, dajte 4 struciky) / 2 garlic cloves
20 listkov thajskej bazalky (alebo koriandrova vnat) / 20 leaves of thai basil
stava z 1 baby citrona  (alebo 2 lyzice stavy z citrona) / lemon juice from 1 baby lemon
sol podla chuti / salt
tandoori masala na dochutenie (alebo mleta rimska rasca) / tandoori masala (or cumin powder)

AKO POSTUPOVAT:

Cerstvy hrach si vyluskame.

Vyluskany hrach 2 minutky povarime v osolenej vriacej vode, odkial ho prelozime do ladovej vody (blansirujeme). / Bring water with salt in the pot to the boil. Add fresh peas and boil for 2 minutes. Strain and keep the peas in cold water.

Potom hrach dame do mixera. Pridame cesnak, listky bazalky, stavu z citrona, tahini a vsetko rozmixujeme dohladka. Hummus prelozime do misky. / Keep the peas in blender. Add garlic, thai basil, lemon juice, tahini and blend until smooth consistency.

Do hummusu pridame troska soli a tandoori masala na dochutenie. Dobre premiesame a mozeme podavat. / Add little bit of salt, tandoori masala and stir well.

My lubime hummus vychladeny a s pecivom. / Before serving you can keep hummus in the refridgerator. Serve with bread.

Rascovy posuch bez kysnutia

CO POTREBUJETE (na 1 posuch):

300g bielej muky (maida)
100g celozrnnej muky (atta)
sol
1 plocha lyzicka prasku do peciva
rimska rasca
lanove semienka
1 lyzica oleja
300ml mineralky (sodovky)

AKO POSTUPOVAT:

V miske zmiesame vsetky suche suroviny. Pridame mineralku a olej a zamiesime cesto.

Plech mozeme vystlat papierom na pecenie, poprasime ho mukou a cesto nan rukou roztlacime na hrubsiu placku. Placku pokvapkame troskou vody.

Posuch pecieme v predohiratej rure na 200st. asi 25 minut. Hotovy vyberieme z rury a pokropime troskou vody. Nechame na mriezke vychladnut.

1 lyzica sladkej chilli omacky

trocha pomarancovej kory
1/2 lyzicky cesnakovo-zazvorovej pasty

AKO POSTUPOVAT:

Baklazany umyjeme a osusime. Pokrajame na hrubsie platky. Mala som trocha tvrdsie baklazany a bala som sa, ze budu horke, preto som ich vopred nasolila a potom oplachla. Nemusite to robit.

V miske zmiesame prisady na marinadu. Platky baklazanu troska narezeme v strede a vlozime do marinady. Nechame v chladnicke minimalne hodinu, aby marinadu nasiakli.

Pekac vytrieme olejom a platky baklazanu nan ulozime. Ruru rozohrejeme na 180st. Kazdy platok baklazanu troska osolime a polozime nan listocek thajskej bazalky. 

Pecieme asi 20 minut.

Mozeme podavat s pecivom alebo ako prilohu ku kari, ryzi.
